I used <a rel=\"\" aria-label=\"\" href=\"http:\/\/www.samanthataffner.com\/blog\/fresh-fleur-verte-goat-cheese-from-le-chevrefeuille-s-a\/\" target=\"_blank\">Fresh Fleur Vert Goat Cheese.<\/a><\/span><\/label><\/li><li><input type=\"checkbox\" id=\"dr-ing-ingredient-item-6036c016dbeb4\"\/><label for =\"dr-ing-ingredient-item-6036c016dbeb4\"><span class=\"dr-ingredient-name\">3 oz Spinach<\/span><\/label><\/li><li><input type=\"checkbox\" id=\"dr-ing-ingredient-item-6036c016dbeb5\"\/><label for =\"dr-ing-ingredient-item-6036c016dbeb5\"><span class=\"dr-ingredient-name\">1.5 lb pork tenderloin<\/span><\/label><\/li><li><input type=\"checkbox\" id=\"dr-ing-ingredient-item-161420334453819\"\/><label for =\"dr-ing-ingredient-item-161420334453819\"><span class=\"dr-ingredient-name\">Butchers twine<\/span><\/label><\/li><li><input type=\"checkbox\" id=\"dr-ing-ingredient-item-161420335708020\"\/><label for =\"dr-ing-ingredient-item-161420335708020\"><span class=\"dr-ingredient-name\">1 TBSP cooking oil<\/span><\/label><\/li><\/ul><\/div>\n\t\t\t<\/div>\n\n<div id=\"dr-block-instructions\" class=\"dr-summary-holder\">\n\t\t\t\t<div class=\"dr-instructions\"><div class=\"dr-instrc-title-wrap\"><h3 class=\"directions-title dr-title\">Directions<\/h3><\/div><ol class=\"directions-list dr-ordered-list\"><li>Preheat oven to 400 \u00b0F<\/li><li><strong>Saut\u00e9 Spinach<\/strong>: In a large skillet you can put in the oven (I use cast iron) add 1 TBSP of cooking oil and heat to medium high heat.  Add spinach.  Cook until the spinach wilts and removed from pan.  <\/li><li><strong>Make Filling<\/strong>: Mix cherries, goat cheese, and wilted spinach in a bowl.<\/li><li><strong>Prep Tenderloin<\/strong>: <br \/>Pat dry then lay tenderloin on a cutting board. <br \/>Hold knife blade parallel to the board and make a lengthwise cut through the center. <br \/>Stop 1\/4&#8243; short of the opposite edge of the tenderloin so pork remains in one piece.<img loading=\"lazy\" decoding=\"async\" width=\"1000\" height=\"750\" src=\"http:\/\/www.samanthataffner.com\/blog\/wp-content\/uploads\/2021\/02\/PXL_20210224_222955390.PORTRAIT-scaled-e1614209887781.jpg\" class=\"direction-step-image\" alt=\"\" title=\"PXL_20210224_222955390.PORTRAIT\" style=\"\" \/><\/li><li><strong>Stuff the Tenderloin<\/strong>: <br \/>Open meat as you would a book. <br \/>Pound to a uniform thickness.<br \/>Season inside with salt and pepper<br \/>Place filling down center and roll up tenderloin<br \/>Tie tenderloin closed with twine<br \/>Season with salt and pepper<img loading=\"lazy\" decoding=\"async\" width=\"1000\" height=\"750\" src=\"http:\/\/www.samanthataffner.com\/blog\/wp-content\/uploads\/2021\/02\/PXL_20210224_223424723.PORTRAIT-scaled-e1614210109379.jpg\" class=\"direction-step-image\" alt=\"\" title=\"PXL_20210224_223424723.PORTRAIT\" style=\"\" \/><\/li><li><strong>Sear Tenderloin<\/strong>:<br \/>Take the skillet you cooked the spinach in and set it on high heat.  <br \/>Add a little more cooking oil if necessary.<br \/>Once the pan is very hot add pork to the pan.<br \/>Cook on all sides with out disturbing for 6 minutes each side.<img loading=\"lazy\" decoding=\"async\" width=\"1000\" height=\"750\" src=\"http:\/\/www.samanthataffner.com\/blog\/wp-content\/uploads\/2021\/02\/PXL_20210224_225213727.PORTRAIT-scaled-e1614210352161.jpg\" class=\"direction-step-image\" alt=\"\" title=\"PXL_20210224_225213727.PORTRAIT\" style=\"\" \/><\/li><li><strong>Bake Tenderloin<\/strong>:<br \/>Place tenderloin on a baking sheet and back for 12-15 minutes.<\/li><li>Remove the tenderloin from the pan and place on a cutting board.
