There are many variations of this dish and this is mine.  <\/p>\n\n\n<div id=\"dr-block-ingredients\" class=\"dr-summary-holder\">\n\t\t\t\t<div class=\"dr-ingredients-list\"><div class=\"dr-ingrd-title-wrap\"><h3 class=\"ingredients-title dr-title\">Ingredients<\/h3><\/div><ul class=\"ingredients-list dr-unordered-list\"><li><input type=\"checkbox\" id=\"dr-ing-ingredient-item-640e04188c054\"\/><label for =\"dr-ing-ingredient-item-640e04188c054\"><span class=\"dr-ingredient-name\">Boneless skinless chicken thighs<\/span><\/label><\/li><li><input type=\"checkbox\" id=\"dr-ing-ingredient-item-640e04188c056\"\/><label for =\"dr-ing-ingredient-item-640e04188c056\"><span class=\"dr-ingredient-name\">4 cloves of garlic minced<\/span><\/label><\/li><li><input type=\"checkbox\" id=\"dr-ing-ingredient-item-640e04188c057\"\/><label for =\"dr-ing-ingredient-item-640e04188c057\"><span class=\"dr-ingredient-name\">pepper rings to taste<\/span><\/label><\/li><li><input type=\"checkbox\" id=\"dr-ing-ingredient-item-640e04188c058\"\/><label for =\"dr-ing-ingredient-item-640e04188c058\"><span class=\"dr-ingredient-name\">a little pepper rings juice<\/span><\/label><\/li><li><input type=\"checkbox\" id=\"dr-ing-ingredient-item-167864034421119\"\/><label for =\"dr-ing-ingredient-item-167864034421119\"><span class=\"dr-ingredient-name\">1 sliced sweet yellow onion<\/span><\/label><\/li><li><input type=\"checkbox\" id=\"dr-ing-ingredient-item-167864036791420\"\/><label for =\"dr-ing-ingredient-item-167864036791420\"><span class=\"dr-ingredient-name\">1 can tomato Sauce<\/span><\/label><\/li><li><input type=\"checkbox\" id=\"dr-ing-ingredient-item-167864038419421\"\/><label for =\"dr-ing-ingredient-item-167864038419421\"><span class=\"dr-ingredient-name\">1 pint heavy cream<\/span><\/label><\/li><li><input type=\"checkbox\" id=\"dr-ing-ingredient-item-167864039487922\"\/><label for =\"dr-ing-ingredient-item-167864039487922\"><span class=\"dr-ingredient-name\">spices you use for spaghetti sauce<\/span><\/label><\/li><li><input type=\"checkbox\" id=\"dr-ing-ingredient-item-167864041680923\"\/><label for =\"dr-ing-ingredient-item-167864041680923\"><span class=\"dr-ingredient-name\">Parmesan cheese<\/span><\/label><\/li><li><input type=\"checkbox\" id=\"dr-ing-ingredient-item-168143648765629\"\/><label for =\"dr-ing-ingredient-item-168143648765629\"><span class=\"dr-ingredient-name\">1 box of rigatoni <\/span><\/label><\/li><\/ul><\/div>\n\t\t\t<\/div>\n\n<div id=\"dr-block-instructions\" class=\"dr-summary-holder\">\n\t\t\t\t<div class=\"dr-instructions\"><div class=\"dr-instrc-title-wrap\"><h3 class=\"directions-title dr-title\">Instructions<\/h3><\/div><ol class=\"directions-list dr-ordered-list\"><h4 class=\"dr-title\">Cook chicken<\/h4><li>Preheat a cast iron skill to high heat.  <\/li><li>Grease pan with oil<\/li><li>Pat chicken dry.  Season on both sides with salt and pepper.<\/li><li>Cook chicken for 4 minutes without moving on one side. Flip and sear for another 4 minutes on the other side. Use a thermometer to ensure chicken is fully cooked. Remove from pan and set aside<\/li><h4 class=\"dr-title\">Make sauce<\/h4><li>In the same pan and 1 TBSP of olive oil.  On medium high heat.<\/li><li>Add onion and cook until tender and fragrant. <\/li><li>Then add the garlic and cook for another minute or two until fragrant.<\/li><li>Add pepper rings.<\/li><li>Add sauce reduce heat to low.<\/li><li>Then add heavy cream, some pepper ring juice, and spices.  Blend together.<\/li><li>Season with pepper.  There will be a lot of parmesan added so salt sparingly.<\/li><li>Add a layer of freshly ground parmesan cheese to the top of the sauce.  Cover entire surface.  Do not stir.<\/li><li>Let simmer for and hour.<\/li><h4 class=\"dr-title\">Add chicken<\/h4><li>Slice chicken and add to sauce.  Stir in and turn off stove.<\/li><h4 class=\"dr-title\">Cook rigatoni <\/h4><li>Cook rigatoni as directed on the box to al dente.<\/li><li>Drain pasta and add a little sauce to the rigatoni.  Just enough to prevent sticking.<\/li><h4 class=\"dr-title\">Serve<\/h4><li>Serve with sauce over rigatoni.  Top with freshly ground black pepper and freshly grated parmesan cheese.<\/li><\/ol><\/div>\n\t\t\t<\/div>","protected":false},"excerpt":{"rendered":"<p>This dish is a regional dish from Utica-Rome NY.
