{"id":360,"date":"2020-03-30T15:03:48","date_gmt":"2020-03-30T19:03:48","guid":{"rendered":"http:\/\/www.samanthataffner.com\/blog\/?p=360"},"modified":"2021-02-11T21:01:53","modified_gmt":"2021-02-12T02:01:53","slug":"coconut-curry-lentils","status":"publish","type":"post","link":"https:\/\/www.samanthataffner.com\/blog\/coconut-curry-lentils\/","title":{"rendered":"Coconut Curry lentils"},"content":{"rendered":"\n<h1 class=\"wp-block-heading\"><\/h1>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredients<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>2 TBSP canola oil<\/li><li>2 medium yellow onion diced<\/li><li>4 garlic gloves minced<\/li><li>2 tsp ginger minced<\/li><li>10 small potatoes halved<\/li><li>1 cup red lentils<\/li><li>2 Cup vegetable broth<\/li><li>1 13.5oz can coconut milk<\/li><li>3 oz of spinach<\/li><li>2 cups of cooked rice of choice<\/li><li>2 TBSP <a href=\"http:\/\/www.samanthataffner.com\/blog\/red-curry-paste\/\" target=\"_blank\" rel=\"noreferrer noopener\">Red Curry paste<\/a><\/li><li>4 oz of Sour Cream or plain greek yogurt<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Directions<\/h2>\n\n\n\n<ol class=\"wp-block-list\"><li>Add oil to instant pot and set it to saute<\/li><li>When oil is hot add onions and saute until tender<\/li><li>Add garlic, ginger, and potatoes. Saute for 2 minutes<\/li><li>Add the lentils, broth, and coconut milk.
