Ingredients
- 1 cup dry Berbere spice
- Berbere is an Ethiopian Paprika based spice mixture.
- It can be made or purchased at your local Ethiopian or Eritrean grocery store.
- 1 Chicken
- 2 cans of honey ginger cider. I used southern Tier cider works Honey ginger cider
Directions
- Coat chicken in Berbere dry spice mix.
- Let sit in refrigerator until ready to grill
- Start fire in fire pit off to the side
- Place open can of cider inside cavity of chicken. Use chicken legs to steady chicken.
- Cover chicken and cook with it’s back to the fire for 1.5 – 2 hours.
