Ingredients

  • 1 cup dry Berbere spice
    • Berbere is an Ethiopian Paprika based spice mixture.
    • It can be made or purchased at your local Ethiopian or Eritrean grocery store.
  • 1 Chicken
  • 2 cans of honey ginger cider. I used southern Tier cider works Honey ginger cider

Directions

  1. Coat chicken in Berbere dry spice mix.
  2. Let sit in refrigerator until ready to grill
  3. Start fire in fire pit off to the side
  4. Place open can of cider inside cavity of chicken. Use chicken legs to steady chicken.
  5. Cover chicken and cook with it’s back to the fire for 1.5 – 2 hours.
