Check Freshness of yeast: Add warm water and yeast to the bread mixer. Set to stir a few times and then pause the mixer. The mixture should start to bubble. If bubbles do not occur after 10 minutes your yeast is bad. Use new yeast.
Add the rest of the ingredients into the bread maker.
Let the bread machine dough program finish.
Once the dough doubles in size. Punch down
Weigh the dough and cut into 4 equal loaves
Shape into rectangles loaves on a floured surface. Place on a greased pan. Cover and let rise for 30 minutes
Preheat oven to 450 °F/ and place a pan of water on the bottom rack.
Uncover loaves and make 4 elongated slashes down each one with a lame, razor, or sharp knife.
Bake the loaves for 35 to 40 minutes, or until crusty and brown.
