My Journey to Master the Egg

I have decided that mastering the egg is my next culinary obstacle. I picked many different

  • Omelette
After a week of different failed omelettes I made a fluffy not browned perfectly cooked 1 egg omelette and it was for the dog.
  • Poached

First poached egg. It needs more work. Boil water. Turn down heat to just under boil. Crack egg into a cup with a handle. Add two TBSP of white vinegar to harden the egg whites. Start stirring water to get a vortex going. Gently lower the cup tilted into the vortex so the egg flows in the same direction of the vortex. Cook for 3 minutes just below boiling. Spoon out and dry gently on a paper towel.
