Ingredients
- Fennel Slaw
- 1/4 of a small water melon cubed
- 1 tsp smoked paprika
- 1/4 Absinthe
- 5 Mint leaves, finely sliced
- Salt and Pepper
Directions
- Make Fennel Slaw as directed
- Once the Fennel Slaw has marinated for 30 minutes, add Slaw and watermelon cubes to a blender. Purée the slaw and watermelon.
- Transfer Purée to a sauce pan
- Bring to a boil and then turn down to a simmer
- Season with salt and pepper
- Add smoked paprika and Absinthe
- Simmer on low for 1 hour
- Season with salt and pepper and add finely sliced Mint leaves
