Ingredients

  • Fennel Slaw
  • 1/4 of a small water melon cubed
  • 1 tsp smoked paprika
  • 1/4 Absinthe
  • 5 Mint leaves, finely sliced
  • Salt and Pepper

Directions

  1. Make Fennel Slaw as directed
  2. Once the Fennel Slaw has marinated for 30 minutes, add Slaw and watermelon cubes to a blender. Purée the slaw and watermelon.
  3. Transfer Purée to a sauce pan
  4. Bring to a boil and then turn down to a simmer
  5. Season with salt and pepper
  6. Add smoked paprika and Absinthe
  7. Simmer on low for 1 hour
  8. Season with salt and pepper and add finely sliced Mint leaves
