Coconut Curry lentils

Ingredients

  • 2 TBSP canola oil
  • 2 medium yellow onion diced
  • 4 garlic gloves minced
  • 2 tsp ginger minced
  • 10 small potatoes halved
  • 1 cup red lentils
  • 2 Cup vegetable broth
  • 1 13.5oz can coconut milk
  • 3 oz of spinach
  • 2 cups of cooked rice of choice
  • 2 TBSP Red Curry paste
  • 4 oz of Sour Cream or plain greek yogurt

Directions

  1. Add oil to instant pot and set it to saute
  2. When oil is hot add onions and saute until tender
  3. Add garlic, ginger, and potatoes. Saute for 2 minutes
  4. Add the lentils, broth, and coconut milk. Reset instant pot to pressure cook on high for 5 minutes.
  5. Once pressure cooking is completed release pressure and stir in spinach.
  6. Serve over rice and top with a dollop of sour cream or yogurt.
