When I lived in St. Louis, there was a Mexican food truck that made amazing sweet potato tacos. I haven’t been able to find anything like it since, so I decided to make them myself.

  1. Make sweet potato
    • Add 1 TBSP of oil to a non stick frying pan on medium high heat.
    • Once the pan is hot, add cumin and mustard seeds. Once they get hot enough, the seeds will start to pop.
    • After about a minute add diced onions.
    • Season with salt and pepper.
    • Once the diced onions are tender, add the diced sweet potatoes.
    • Turn heat down to medium. Cook potatoes with a cover on them until tender. Stirring occasionally.
    • Stir in gram masala and curry leaf powder.
    • Cook for another 2 minutes
  2. Assemble
    • Fill a tortilla with sweet potato, a TBSP of salsa verde, freshly grated pepper jack cheese, and top with cilantro
