Mix prunes, crumble goat cheese, and green onions in a small bowl.
Stuff Tenderloin
Rinse tenderloin and pat dry.
Lay tenderloin on a cutting board. Hold knife blade parallel to the board and make a lengthwise cut through the center. Stop 1/4″ short of the opposite edge of the tenderloin so pork remains in one piece.
Open meat as you would a book.
Pound to a uniform thickness.
Place filling down center and roll up tenderloin
Tie pork tenderloin closed with twine.
Season with salt and pepper
Sear Tenderloin
Add pork to a hot pan on high heat.
Cook on all sides for 6 minutes each.
Bake Tenderloin
Place tenderloin on a baking sheet and bake for 12-15 minutes.
