Prune and Goat Cheese-stuffed Pork Tenderloin

Ingredients

  • 1 oz prunes, sliced
  • 2 oz Goat cheese
  • 3 green onions chopped
  • 1 pork tenderloin
  • Butchers twine

Directions

  1. Preheat oven to 400 °F
  2. Make Filling
    • Mix prunes, crumble goat cheese, and green onions in a small bowl.
  3. Stuff Tenderloin
    • Rinse tenderloin and pat dry.
    • Lay tenderloin on a cutting board. Hold knife blade parallel to the board and make a lengthwise cut through the center. Stop 1/4″ short of the opposite edge of the tenderloin so pork remains in one piece.
    • Open meat as you would a book.
    • Pound to a uniform thickness.
    • Place filling down center and roll up tenderloin
    • Tie pork tenderloin closed with twine.
    • Season with salt and pepper
  4. Sear Tenderloin
    • Add pork to a hot pan on high heat.
    • Cook on all sides for 6 minutes each.
  5. Bake Tenderloin
    • Place tenderloin on a baking sheet and bake for 12-15 minutes.
