    Prep

  1. Roast and walnuts. Set aside to cool.

  3. Mix ground flax seeds and water in a small bowl and set aside.

  5. Place all step 2 ingredients into a food processor and pulse about 12 short pulses.
  6. Transfer to a large bowl and set aside.

  8. Heat a skillet over medium high heat and add a little oil.
  9. Add onions and peppers and cook, stirring frequently, until softened about 5 minutes.
  10. Add garlic and cook, stirring constantly for about 2 minutes.

  13. Add beans to the food processor and pulse until roughly chopped.
  14. Transfer to a large bowl.

  16. Add flax mix to the large bowl and mix all ingredients together
  17. If the mixture is too dry, add a bit of water.
  18. Patty mixture can be stored in an airtight container in the refrigerator for up to three days at this stage.
  19. Prepare patties

  20. Place some black bean mixture in a food mold and push down firm.

  23. Heat a cast iron pan on high heat.
  24. Add a little oil
  25. Once the pan is hot place the patty in the pan.
  26. Once the patty is seared on one side flip and sear the other side.
