Lemon, Leak, and Goat Cheese Tart

Ingredients

  • Veggies
    • 2 leaks rinsed and chopped
    • 1 cup parsley
    • 1 TBSP butter
    • Salt and pepper to taste
  • Dough
    • 2 cups flour
    • 2 tsp baking powder
    • 1 tsp salt
    • 6 TBSP melted butter
    • 0.75 cup milk
  • Egg Mixture
    • 6 eggs
    • 1 zested lemon
    • 4 oz goat cheese
    • freshly ground pepper

Directions

  • preheat oven to 425 ° F
  • Veggies
    • melt butter in a frying pan
    • Add leaks and cook until tender. About 10 minutes.
    • Add parsley and cook for a minute
    • Add salt and pepper to taste.
  • Dough
    • Combine all ingredients in a medium sized bowl
    • Stir with a wooden spoon into a flaky dough
    • Press into an even layer in a greased 8-in round pan
  • Egg Mixture
    • Combine all ingredients into a medium sized bowl
  • Final Assembly
    • Add veggies making an even layer on top of dough in the 8-in round pan
    • pour egg mixture making an even layer on top of veggies
    • cook in oven for 40 minutes
    • Serve

Suggested Variations

  • Use a stronger cheese like Stilton or an aged cheddar
  • Use a more melty cheese Gouda
