Ingredients

  • Cooking Spray
  • Aluminum foil
  • 1 Cup Water
  • 6 large eggs
  • 1 1/4 Cup Milk
  • 3/4 Cup Heavy Cream
  • 1/4 Cup granulated Sugar
  • 1.5 tsp pure vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp salt
  • 1/4 tsp ground nutmeg
  • 14 oz day old bread cut into 1″ cubes. I used left freshly baked Italian bread. Other options are broche or challah bread.
  • Powdered Sugar, for serving
  • Maple Syrup, for serving
  • Berries, for serving

Equipment

  • Instant Pot
  • 7 Inch Non-stick Springform Pan/Cheesecake Pan
  • Trivet with long handles

Directions

  1. Grease a pan with cooking spray
  2. Place trivet inside Instant Pot and pour in water.
  3. In a large bowl whisk together eggs, milk, cream, sugar, vanilla, cinnamon, salt, and nutmeg.
  4. Add bread and gently toss to combine
  5. Pour mixture into prepared pan and cover with foil
  6. Place inside instant pot and inside trivet
  7. Set Instant Pot to Pressure Cook on High for 30 minutes.
  8. Follow manufacturer’s instructions for quick release.
  9. Remove baking dish from instant pot and let cool for 10 minutes
  10. Dust with powdered sugar and serve with maple syrup and fresh berries
