Kale with Roasted Acorn Squash with a Molasses Drizzle

  1. Preheat oven to 450 °F
  2. Mix the sliced acorn squash, 1 TBSP of oil, salt, and pepper. Place on a baking sheet. Bake for 15 – 20 minutes until tender. Stirring half way thru.
  3. In a small bowl combine 1/4 cup of water, 1/4 cup of golden raisins, and 1 TBSP of molasses.
  4. In a skillet place 1 TBSP of oil on medium high heat.
  5. Add Kale and sauté until tender. Stirring often. Season with salt and pepper. Turn off heat and wait until acorn squash is done.
  6. Once acorn squash is done combine with kale. Turn heat back on to medium. Add raisin molasses mixture. Stir to combine. Season with salt and pepper. Heat for 1 minute.
  7. Turn off heat. Add butter. Stir to combine melted butter.
  8. Plate: In a bowl add 1/4 of the dish and top with freshly grated parmesan cheese.
