- Preheat oven to 450 °F
- Mix the sliced acorn squash, 1 TBSP of oil, salt, and pepper. Place on a baking sheet. Bake for 15 – 20 minutes until tender. Stirring half way thru.
- In a small bowl combine 1/4 cup of water, 1/4 cup of golden raisins, and 1 TBSP of molasses.
- In a skillet place 1 TBSP of oil on medium high heat.
- Add Kale and sauté until tender. Stirring often. Season with salt and pepper. Turn off heat and wait until acorn squash is done.
- Once acorn squash is done combine with kale. Turn heat back on to medium. Add raisin molasses mixture. Stir to combine. Season with salt and pepper. Heat for 1 minute.
- Turn off heat. Add butter. Stir to combine melted butter.
- Plate: In a bowl add 1/4 of the dish and top with freshly grated parmesan cheese.
