- Mix dry ingredients: In a medium sized mixing bowl mix whole wheat flour, all-purpose flour, baking powder, orange zest, and pinch of salt
- Dice Butter: Place the cold butter on a cutting board. Dice cold butter. Make sure you do not handle butter with your fingers often because it will melt slightly. I used a rubber spatula to assist when the butter stuck to the knife.
- Add butter into the dry ingredients.
- Mix wet ingredients: In a large mixing bowl or a stand mixer bowl add egg, honey, vanilla, almond milk, and heavy cream. Whisk together until combined.
- Mix by hand instructions: Slowly mix in flour mixture starting to mix with a rubber spatula. Once all the flour mixture is in the bowl start kneading the dough to combine all of the flour into one dough ball. Then add cranberries and pecans and knead in until the evenly combined.
- Mix by a stand mixer: Use a dough hook. Add dry ingredients to wet ingredients and mix until a dough ball is formed. Then add cranberries and pecans and mix in until the evenly combined.
- Place a silicon mat or parchment paper onto a baking sheet.
- Form scones: Form the dough into a flat circle on top of the silicon mat. Slice into 8 pieces using a bench scraper or butter knife.

- Option to add more sugar: If you like your scones with a little more sugar sprinkle the top of the scone now with granulated sugar. This will add a sugary crust on top of the scone. I normally do not do this step.
- Preheat the oven to 400 degrees.
- Place baking tray in the refrigerator for 15 minutes.
- After chilling, bake for 22 – 25 minutes.

- Remove the scones to cool on a wire rack.
