Teotihucan Chicken

Ingredients:

  1. 1 cup of Tomatillo Salsa
    • White onions
    • 6 chopped tomatillos
    • 1 bunch of scallions
    • 2 fresh jalepeno peppers (seeded)
    • 1 bunch of chopped cilantro
    • 1 tsp Black Pepper
    • 1 tsp salt
    • Combine overnight. Makes approximately 3 cups in these quantities.
  2. 4 Key Limes seeded
  3. 1/4 cup Orange Juice
  4. 2 tsp Olive Oil
  5. 2 Chicken breasts
  6. 1 chipotle pepper


Method:
  • Combine the peeled key limes, chipotle pepper,orange juice, salsa, oil and salt in a blender. Blend until you have a nice thick puree.
  • Transfer the blend to a pot and cook on medium for 15 minutes. Keep aside.
  • Place chopped chicken breasts in a large mixing bowl. Then, pour the puree blend from previous step over the top of it.Cover and refrigerate for 6-12 hours.
  • In an open pan, cook marinated chicken on medium heat until meat is tender.
  • Teotihucan Chicken is ready to serve. It can be eaten with her Teotihuacan Mexican rice or White Rice.
