Variations of Zucchini Calzones

Ingredients

  • Chunky Tomato Sauce
    • 5 Tomatoes Diced
    • 2 tsp Tomato Paste
    • 1 TBSP Olive Oil
    • 2 Cloves of Garlic Diced
    • 5 Tomatoes Diced
    • 2 tsp Pesto
    • 1.5 tsp Honey
    • 1/2 tsp Red Pepper
    • Salt and Pepper
    • Grated Parmesan Cheese
  1. Goat cheese and Shitake Mushrooms
    • Whole Wheat Pizza Dough
    • Thinly Sliced Zucchini
    • Garlic
    • Vermont Creamery Fresh Goat Cheese Herb Chevre
    • Diced Red Onions
    • Lime Zest
    • Shiitake Mushrooms
    • Ricotta
  2. Tuna Steak and Spinach
    • Whole Wheat Pizza Dough
    • Thinly Sliced Zucchini
    • Garlic
    • 5 thin slices of Pan Seared Tuna Steak
    • Diced Red Onions
    • Ricotta
    • Spinach
  3. Salami and Pesto
    • Whole Wheat Pizza Dough
    • Thinly Sliced Zucchini
    • Garlic
    • Salami
    • Red Onions
    • Ricotta
    • Smoked Mozzarella
    • Fresh Basil
    • Pesto
  4. Pan Seared Tuna with lime Crème fraîche
    • Whole Wheat Pizza Dough
    • Shaved Zucchini
    • Garlic
      • 1.5 tsp Crème fraîche
      • 1.5 tsp Ricotta
      • 1/4 Lime zested
      • Black Pepper salt
      • 5 thin slices of Pan Seared Tuna Steak
      • Diced Red Onions

Directions

  1. Chunky Tomato Sauce
    • Heat olive oil in a sauce pan and saute garlic until fragrant
    • Add diced tomatoes, honey, pesto, and red pepper.
    • Season with salt and pepper
    • Saute on low for 1 hour until thick
    • Season with parmesan cheese
  2. Dough
  3. Calzones
    • Saute all ceggies separately with olive oil, diced garlic, salt, and pepper
    • Assemble placing ricotta cheese mixture first and adding the remaining ingredients.
    • Close calzone and crimp edges
    • Place a little corn flour on the baking sheet and transfer calzone
    • Poke circular holes in calzone for air vents with a pairing Knife
    • Brush olive oil over calzone
    • Grate Parmesan Cheese
    • Bake at 500 °F for 12 minutes

    • No complaints
  2. Goat cheese and Shitake Mushrooms
    • It need something maybe a provolone or pesto
  3. Tuna Steak and Spinach
    • 1 thumbs up
    • I didn’t like Tuna Steak. Baked inside of a calzone over cooks it. Probably not an ideal meat for calzones
  4. Salami and Pesto
    • Maybe add provolone cheese
  5. Pan Seared Tuna with lime Creme Fraiche
    • 1 thumbs up
    • I didn’t like Tuna Steak. Baked inside of a calzone over cooks it. Probably not an ideal meat for calzones
    • Seems to be a waste to over cook Tuna maybe replace with chicken
  6. Dough
    • Too much flour
    • Need to try corn meal instead of corn flour
    • Roll out with less flour
    • Try egg yolk brush
