Ginger Roasted Apples with Rutabaga

I sent my boyfriend to the grocery store to pick up a squash. He came home with a rutabaga. This is how I dealt with it.

  1. Preheat oven to 350 °F.
  2. Boil carrots and rutabaga for 20 minutes, or until tender.
  3. Meanwhile, coat apples with olive oil, lemon juice, thyme, honey, and ginger. Season with salt and pepper. Bake apples at 350 °F for 20 minutes or until tender.
  4. Drain rutabaga and carrots, then return them to the same pot. Mash or puree rutabaga and carrots. I like using an immersion hand blender.
  5. Stir in milk, then season with salt and pepper.
  6. Mix in apples and any juices from baking pan.
