I sent my boyfriend to the grocery store to pick up a squash. He came home with a rutabaga. This is how I dealt with it.
Ingredients
Directions
- Preheat oven to 350 °F.
- Boil carrots and rutabaga for 20 minutes, or until tender.
- Meanwhile, coat apples with olive oil, lemon juice, thyme, honey, and ginger. Season with salt and pepper. Bake apples at 350 °F for 20 minutes or until tender.
- Drain rutabaga and carrots, then return them to the same pot. Mash or puree rutabaga and carrots. I like using an immersion hand blender.
- Stir in milk, then season with salt and pepper.
- Mix in apples and any juices from baking pan.
