Joojeh kabob is a Persian kebab prepared with juicy pieces of chicken marinated in lemon juice as well as saffron and finely chopped onion. This dish is paired well with tzatziki sauce, grilled veggies, rice, and/or lavash bread.

- In a bowl, combine onion, lemon juice, lemon zest, lemon pepper, saffron, yogurt, salt and pepper. Blend well.
- Pour the mixture over the chicken cubes in a large bowl with a lid. Make sure that all the chicken pieces are fully covered with the marinade. Cover and refrigerate for at least 6 hours, and up to 24 hours.
- Make 4 different types of skewers by threading chicken pieces, red peppers, red onion, and tomatoes onto skewers. Then, place the skewers on a hot grill.
Cook the chicken at least 5 to 7 minutes on each side. Cook veggie skewers until desired doneness is achieved.
Check the doneness of the chicken kabob by cutting through one piece of chicken with a knife. If it is white and juicy, it is ready to eat. - Serve with tzatziki
