Ingredients
- 4 Cups fresh Blueberries
- 14 ox sweetened condensed milk
- 1 TBSP cornstarch
- 1 1/2 cups unsalted butter softened
- 1 Cup granulated sugar
- 2 tsp vanilla extract
- 3 cups all-purpose flour
- 1 tsp salt
- Zest of one lime
Directions
- Preheat oven to 350 ° F
- Line a 9 X 13 inch dish with parchment paper and set aside. I used a non stick silicone baking mat
- Place the blueberries, sweetened condensed milk, and cornstarch in a medium sauce pan.
- Heat over medium heat and bring to a simmer.
- Stir and simmer for 3-5 minutes
- Use a potato masher to smash about half of the blueberries.
- Remove from heat
- Make Crust
- Place the butter and sugar in a large bowl.
- Beat the butter mixture with an electric mixer on high for 3-5 minutes.
- Add the vanilla extract, flour, salt, and zest of the lime.
- Mix until well combined
- Assemble and Bake
- Divide the dough into 2 pieces. One slightly larger than the other.
- Press the large piece of dough into an even layer int he bottom of the baking dish.
- Pour blueberry mixture over the crust evenly.
- Drop small pieces of the remaining dough over the surface of the blueberry filling.
- Bake for 40-45 minutes, until the top is golden.
- Cool the bars to room temperature in the dish.
- Gently lift the entire sheet of parchment or silicone baking mat out of the pan by the edges.
- Cut into squares and store in an air tight container.
