After visiting a Mango/Cardamom farm in Indian I really grew to like the combination of these two ingredients.

This recipe is a work in progress. It was good but needed a little more sugar and less cardamom. I used freshly ground cardamom which is more intense than pre-ground cardamom. My mango wasn’t super ripe so probably adding another 1 TBSP of honey would help this cake out with.

  1. In separate small bowl mix together flour, baking powder, and salt
  2. Place 1 TBSP of butter into the mug and the cardamom. Place the mug in the microwave and heat in 20 second intervals until the butter is melted.
  3. Add to the mug the mango puree and honey. Mix until combined.
  4. Whisk in the egg.
  5. Slowly mix the dry ingredients into the mug.
  6. Place the mug into the microwave and heat for 90 seconds
  7. Top with lemon zest and serve.
