I really like fish tacos, but Mahi-Mahi can be hard to find where I live and I’m not crazy about the taste of Tilapia. So I made some with blackened Haddock instead.

  1. Blacken Fish
    • Cover each side of the fish with Southwest Spice Mixture
    • Put 1 TBSP of oil in a frying pan and set it to high heat. I used a cast iron skillet.
    • Let the pan heat up until it gets really hot. Then, cook the fish for 4.5 minutes on each side.
    • If the fish looks like it is starting to get dry, add more oil to the pan as needed.
  2. Assemble
    • Fill a tortilla with fish, red cabbage, Mango Salsa, and some Southwest Creamy Sauce
