Ingredients

  • 6 Tomatoes; Chopped (I used purple tomatoes)
  • 2 large white onions; peeled and chopped
  • 4 stalks of celery chopped
  • 2 peaches; pitted and chopped
  • 2 pears; cored and chopped
  • 2 apples; cored and chopped (I used sugar bee apples)
  • 1-1/2 cups white vinegar
  • 1-1/2 cups white sugar
  • 1/2 teaspoon salt (I used Himalayan salt)
  • 1/4 teaspoon ground pepper
  • 4 bay leaves
  • 1 tsp crushed red pepper flakes

Instructions

  1. Add all ingredients a large pot.
  2. Cook over medium-low heat, stirring occasionally for 2.5 to 3 hours. Ketchup is done when it is think and most of the liquid has evaporated.
  3. Sterilize 4 16oz glass jars and lids.
  4. Spoon ketchup into sterilized jars.
  5. Store in refrigerator for up to 6 months.
  6. Remove bay leaves before serving.
