Ingredients
- Fennel Slaw
- Watermelon Fennel Sauce
- 2 lbs Pork Belly (unfortunately I could only find sliced pork belly)
- 4 Cups cooked Basmati Rice
- 16 slices of cold watermelon
- 5 Mint leaves, finely sliced
- Salt and Pepper
Directions
- Make two portions of Fennel Slaw one portion for the Watermelon Fennel Sauce and one portion to save for later.
- Make Watermelon Fennel Sauce
- Add Pork Belly slices to a frying and cook in batches until all pieces are crisp
- Remove all Pork Belly slices from pan
- Soak up some of the fat left behind from the pork belly with a paper towel leaving about 1 TBSP in the pan.
- Add 1 portion of fennel slaw to the frying pan and cook until tender.
- Add watermelon fennel sauce to frying pan and crisp pork belly.
- Season with salt and pepper. Stir to combine.
- To a serving bowl add rice and top with watermelon fennel pork belly mixture
- Top with mint leaves and server with 4 slices of cold water melon
