This is a good way to use any left over Harp Brined Corned Beef

  1. Heat corn tortillas: by placing them spread out in the bottom of a skillet. Turn the heat up to high. Drizzle some water around the outside of the pan but not directly on the tortillas. Cover skillet. Cook for 1 minute. Turn of heat. Keep covered for one more minute.
  2. Assemble taco: Stack taco shells on top of each other. Fill taco shell with corned beef, cabbage, green onion and or cilantro, pepper jack cheese, and thousand island dressing. Enjoy.
