Repeat this section for each of the 3 colors of the Irish flag. (Green, Orange, and White)
Set machine program to dough.
Check Freshness of yeast: Add warm water, yeast and sugar to the bread mixer. Set to stir a few times and then pause the mixer. The mixture should start to bubble. If bubbles do not occur after 10 minutes your yeast is bad. Use new yeast. This step is only necessary to do for the first color.
Add 5 drops of food coloring. Either green, orange, or white.
Add the rest of the dough ingredients and let the bread machine finish the kneading of the dough. If the dough is still sticky to the sides of the bread machine pan add a little more flour.
Once the dough is incorporated into a ball but not done kneading yet look to see if dough is the desired color. If not add more drops.
Once the kneading is complete. Take the dough out of the machine and place it in a Ziplock back. Place the dough in the refrigerator and repeat these steps with the other colors.
Once all of the dough is finished all of the dough out of the refrigerator and let it rise for 30 minutes. Meanwhile make your colored sesame seeds.
Fill a wok half way with water or another large pot. Add Honey and bring to boil.
Reduce heat to a simmer.
Punch all dough down.
Roll out the green dough into a 36 inch long rectangle. Cover with a damp towel.
Then roll out the white dough into the same size rectangle. Place the white dough rectangle on top of the green rectangle. Cover with a damp towel.
Then roll out the orange dough into the same size rectangle. Place on top of the white rectangle.
Slice with a bench scraper an inch wide piece of dough from the skinny end of the rectangle. Cover remaining dough with a damp towel.
Roll out the dough to about a half an inch in diameter.
Wrap the rolled dough around your hand and seal the two ends of by rolling the overlapping pieces against your palm and table.
Place shaped bagel on a floured surface
Simmer all shaped bagels in the honey water for 3 minutes. 1.5 minutes on each side.
Remove from water. Let cool for 30 seconds to a minute.
Dip bagels in the colored sesame seeds. The sweet water will make the sesame seeds stick. Cover both sides of the bagel completely.
Transfer to a baking sheet lined with parchment paper and bake for 11 minutes.
After 11 minutes flip the bagels and continue baking for another 11 minutes.
Cool for a few minutes before eating.
Make Colored Sesame Seeds
Preheat oven to 200 °F.
Use a scale to split the sesame seeds into 3 separate bowls with lids.
Add 3 – 4 drops of food color to each of the separate bowls.
Place the lid on the bowls.
Shake the bowls to coat the seeds with color. Open the bowls and see if all of the seeds are covered with color. If seeds are not completely covered, add more food coloring close and shake again. Repeat until completely coated.
Empty each bowl into its own parchment paper lined baking sheet. Place in the oven for 10 minutes. Take out of the oven and let cool.
